Performance Protein Pancakes

Ingredients

  • 2 large eggs.
  • 1 banana.
  • 1/8 tsp cinnamon.
  • 1/4 tsp baking powder.
  • 1/4 tsp salt. 
  • Performance Protein, 2 scoops.

Method

  1. Separate both eggs in to two bowls. One bowl with the egg yolks and one with the egg whites.
  2. Beat the egg whites until they form soft peaks.
  3. Add all other ingredients to the bowl with egg yolks and beat until smooth.
  4. Gently fold 1/3 of the egg whites into the banana mixture
  5. Repeat step 4 with 1/2 the remaining egg whites and again with the last portion until you reach a smooth consistency. 
  6. Heat a pan on a low heat,
  7. Spoon 1/4 of the mixture into the pan and cook on each side until brown and fluffy.
  8. Serve with fresh fruit of your choice and honey. 
  9. Enjoy!
